eviled “Eggz”

A party just isn’t the same without a deviled something. This recipe is a fun finger food that will have everyone raving. Besides making these deviled “Eggz”, the filling is also great as a side dish. For me, I like to make my mashed potatoes using this recipe. I use it as a side dish and any leftovers might be used on a sandwich the next day.

Ingredients
  

  • 24 mushrooms use baby Bella or bottom mushrooms, stems removed
  • 1 can chickpeas drained and rinsed (or cannellini beans)
  • 5 potatoes medium sized new potatoes
  • 1 cup green onions
  • 2 cloves garlic
  • 1 lemon use the juice and the zest
  • 1 tbsp mustard seeds I use the Maille Old Style Mustard
  • 2 tsp dijon mustard
  • 1 tsp turmeric
  • 0.5 tsp black pepper freshly ground

Instructions
 

  • Preheat the oven to 400°F. Line a baking sheet with some parchment paper. Place the mushrooms, stems removed, side up on the prepared baking sheet. Bake for 15 minutes, or until slightly browned. Set aside to cool.
  • Steam the potatoes (save the steaming water to create a smooth consistency with all the ingredients in the food processor).
  • Combine all ingredients (including the steamed potatoes but not the mushrooms) in the food processor and process until uniformly smooth and creamy.
  • To serve. spoon small amounts of the filling into each mushrooms and use some smoked paprika as decoration.
