Instructions
Preheat the oven to 400°F. Line a baking sheet with some parchment paper. Place the mushrooms, stems removed, side up on the prepared baking sheet. Bake for 15 minutes, or until slightly browned. Set aside to cool.
Steam the potatoes (save the steaming water to create a smooth consistency with all the ingredients in the food processor).
Combine all ingredients (including the steamed potatoes but not the mushrooms) in the food processor and process until uniformly smooth and creamy.
To serve. spoon small amounts of the filling into each mushrooms and use some smoked paprika as decoration.
