This salad is nutrient packed and delicious! Cilantro (Coriander) is very beneficial as a detoxification herb due to its proven ability to eliminate heavy metals and other toxic metabolites from the body and we can all use a helping hand with that. ENJOY!

Ingredients
 
 

  • 3 cups red cabbage thinly sliced
  • 3 cups kale thinly sliced
  • 3 cups bean sprouts
  • 1 cup carrots shredded
  • ¼ cup red onion thinly sliced
  • 2 avocado thinly sliced
  • 2 green onions chopped
  • ¼ cup cilantro chopped
  • ¼ cup mint leaves chopped
  • ½ cup almonds slivered
  • ½ cup pepitas pumpkin or sunflower seeds
  • 1 lemon lemon or lime

Instructions
 

  • Prepare all salad ingredients (wash, slice and dice)
  • Add the juice of the lemon and the avocado to the kale and massage everything (get you hands dirty!). This way the kale will become tender and very creamy. You could leave this step out but I like my kale better when it's creamy
  • Toss all ingredients (not the avocado and save some cilantro and mint) into a large bowl
  • Top the salad with some slices of avocado and garnish with some cilantro and mint leaves

Notes

For the dressing you can do the following: take the juice of 1 lemon or lime, 1 tbsp tamari, 1 tsp of maple syrup and some sea salt and pepper to taste.
