Prepare all salad ingredients (wash, slice and dice)
Add the juice of the lemon and the avocado to the kale and massage everything (get you hands dirty!). This way the kale will become tender and very creamy. You could leave this step out but I like my kale better when it's creamy
Toss all ingredients (not the avocado and save some cilantro and mint) into a large bowl
Top the salad with some slices of avocado and garnish with some cilantro and mint leaves
Notes
For the dressing you can do the following: take the juice of 1 lemon or lime, 1 tbsp tamari, 1 tsp of maple syrup and some sea salt and pepper to taste.
