This is a delicious desert, it is layered with fresh or frozen mangos, raspberries, mango paste, cashew vanilla cream and toasted almonds.

This is a delicious desert, it is layered with fresh or frozen mangos, raspberries, mango paste, cashew vanilla cream and toasted almonds.
Ingredients
Making of the Mango Paste
- 1.5 cups dried mango
- water
Assembling the Parfaits
- 1.5 cups mango fresh or frozen, diced
- 1.5 cups raspberry fresh
- 2 cups cashew vanilla cream home made
- 0.25 cup almonds slivered
- 2 tsp lemon zest
Instructions
Making of the Mango Paste
- Place the dried mangos into a bowl and fully cover with water.
- Let soak until they have completely softened.
- Add the soaked mangoes into a high speed blender and blend until smooth. Only add as much water to make this into a smooth paste.
