Chia seeds are the up and coming health food, why not try to make a Chia seed pudding?

Chia seeds are a nutritional powerhouse. They are packed with omega-3 fatty acids, antioxidants, calcium, fiber and protein. In addition, they are fun to work with because they absorb the fluids and transform into a nice gel that makes it easy to create your pudding.

Ingredients
 
 

Chia seed layer

  • 0.5 cup chia seeds
  • 1 bananas
  • 0.5 cup strawberries
  • 1 cup water You can use Almond Milk too
  • 1 tbsp maple syrup

Whip cream layer

  • 1 cup coconut milk SO Delicious Dairy Free Culinary Coconut Milk
  • 0.25 tsp stevia Use only a little and taste, you can always add more!

Instructions
 

Chia seed layer

  • Add the banana, strawberries and maple syrup into a pan and stir on low heat until it's like a jam.
  • Add the chia seeds and water (or Almond milk) and mix everything until it is nice and consistent. Just keep adding more water if it is still too thick.
  • Poor the chia seed pudding into 4 different glasses (bowls or anything that looks good to serve this dessert).

Whip cream layer

  • Whip the coconut milk into a bigger bowl to get the right consistency.
  • Add only a little bit of stevia to give it some sweetness.
  • Add the coconut milk/"whip cream" into the glasses on top of the chia mixture.
  • Add some slices of strawberry, a mint leaf and some coco shavings to top it all off.
