Cashew Vanilla Cream
A great non-diary vanilla cream that can be used as a layer in parfaits, served over your favorite fruits or on your home made ice cream.
Ingredients
- 2 cups cashews raw cashews
- 0.25 cup apricot paste
- 0.75 cup coconut water
- 0.5 vanilla bean just the seeds!
- 1 pinch sea salt
Instructions
- Soak the cashews in water for about 1 to 2 hours to soften.
- After soaking add all ingredients into a high speed blender and blend until smooth.
Notes
Cashew cream will keep for about a week in the refrigerator. It can also be frozen for a few months.
