This Apple Curry Walnut Salad is a nice sweet, savory and crunchy mixture that makes for a delicious bite. This salad is great on bread or a tortilla but this salad is so good that I could eat it all by itself as a meal. Make sure to slice the apples, red bell pepper and celery thin for a more elegant salad.
Apple Curry Walnut Salad
This Apple Curry Walnut Salad is a nice sweet, savory and crunchy mixture that makes for a delicious bite. This salad is great on bread or a tortilla but this salad is so good that I could eat it all by itself as a meal. Make sure to slice the apples, red bell pepper and celery thin for a more elegant salad.
Ingredients
- 1 cup cashew sour cream you can also use vegenaise but keep in mind that this will have oils!
- 3 tbsp madras curry
- 1 can chickpeas rinsed and drained
- 1 apple sweet apple, like a Gala
- 3 stalks celery
- 0.25 cup green onions finely chopped
- 1 cup walnuts crushed
- 0.5 cup red bell pepper finely diced
- 0.5 cup raisins golden raisins
- 1 pinch sea salt
- 0.25 tsp black pepper freshly ground
- 2 tbsp lemon juice
Instructions
- Whisk the cashew sour cream and curry powder in a bowl until smooth and creamy. Cut the apple, celery, green onions, red bell pepper and crush the walnuts using a ziplock bag.
- In a large bowl, add the chickpeas and mash them. No need to mash them all as long as the majority of the peas are mashed.
- Toss together the chickpeas, apples, celery, green onions, walnuts, red bell pepper, raisins and season lightly with salt and pepper. Add the cashew sour cream/curry powder mixture and mix everything well.
- Add the juice of about 1/2 lemon and mix everything again.
- Serve on a tortilla with some greens (arugula or sprouts), cherrie tomatoes or sliced tomato.
