Place the dried mangos into a bowl and fully cover with water.
Let soak until they have completely softened.
Add the soaked mangoes into a high speed blender and blend until smooth. Only add as much water to make this into a smooth paste.
Assembling the Parfaits
To assemble the parfaits, layer with mango paste, raspberries, fresh mangos, vanilla cashew cream. Repeat if necessary. Garnish each parfait with toasted almonds a hint of lemon zest and some fresh mint.
