arm Green Peas Salad.
If I run into an assortment of fresh peas and little beans, while shopping, this is the recipe that comes to mind. It is easy to make and tastes delicious on its own or as a side dish.
Warm Green Peas Salad
This warm green peas salad is easy to make when you run into an assortment of fresh peas and little beans.
Ingredients
- 3 cups green peas I like to use a mixture of different fresh peas/beans
- 1 cup sweet onion finely chopped
- 2 cloves garlic minced
- 1 jalapeño pepper finely chopped
- 1 cup dill fresh and finely chopped
- 0.5 cup green onions (scallions) finely chopped
- 1 cup celery
- 1 cup cherry tomatoes cut in half
- 2 tsp smoked paprika
- 3 tbsp balsamic vinegar
- 1 pinch sea salt to taste
Instructions
- Dry sauté the onions* use some water or vegetable broth to avoid the onions to stick or burn to the skillet or wok. Add the jalapeño pepper and minced garlic and cook for an additional 30 seconds.* Note: To dry sauté (or sautéing without oil!) use high heat and frequent movement to caramelize the food. An important thing to keep in mind is that foods will not brown, color or caramelize if you use liquid or have too much moisture. Once you achieve the desired coloration then add your liquid.
- Add the mixed green peas into the a wok (don't cook, just make sure they are tender and warm).
- Add dill, cut cherry tomatoes, celery and green onions + the smoked paprika, salt and pepper to taste.
- Add the balsamic vinegar. Mix with the warm green pea salad and serve - enjoy.
