alsa Borracha.

You can call this salsa borracha because of the addition of beer. Translated from Spanish, borracha means drunk, not that 0.25 of a cup will get you there. I am using the Arbol chili’s in this recipe but you could add different chili’s if the Arbol ones are too hot (they are similar to cayenne in flavor and heat). Using jalapeño will be milder in flavor and heat.

Ingredients
 
 

  • 1 lb tomatoes (about 5 to 6 tomatoes)
  • 4 arbol chili dried
  • 1 clove garlic
  • 0.5 onion diced
  • 0.25 cup beer lager beer
  • 0.5 bunch cilantro finely chopped
  • 1 tsp sea salt
  • 1 tbsp oregano fresh (can use dried too)

Instructions
 

  • Place the tomatoes and chili's into a pot, cover with cold water and bring to a simmer

  • Meanwhile, roughly chop the garlic, dice the onion and finely chop the cilantro and oregano
  • As soon as the first tomato splits, remove everything from the boiling water. Remove the stems from the chili's and add to a high speed blender
  • Place the garlic, beer and salt into the blender too. Blend until everything is liquefied. Pour into a bowl
  • Add the diced onions, cilantro, and oregano into the bowl and stir to combine
  • Taste for seasoning
