aw Apple Pie.
Being originally from The Netherlands, I had to create a healthy apple pie solution. This is an easy raw apple pie recipe that requires only a food processor to make. Once completed, the apple pie is stored in the freezer.

This is an easy raw apple pie recipe that requires only a food processor to make. Once completed, the apple pie is stored in the freezer.
Ingredients
Crust
- 1 cup walnuts
- 1 cup dates
- 1 tbsp lemon juice freshly squeezed
- ¼ tsp sea salt
Filling
- ¾ cup dates
- 3 granny smith apples
- 1 cup coconut fine shavings
- 2 tbsp lemon juice the juice of 1 lemon should be enough for both the filling and crust
- 1 tsp ground cinnamon
Instructions
Crust
- Add all the crust ingredients into a food processor. Process until the mixture sticks together and the dates are well processed.
- Put the crust mixture into your pie dish (I like the ones where you can separate the ring from the bottom). Press the crust down firmly in your dish with your hands or a spoon. Place in the fridge while making the filling, the crust is now done.
Filling
- Two of the apples will go into the food processor and one apple will need to be cut into small pieces. Sprinkle the lemon juice on top of the small apple pieces to avoid browning/oxidation. Do this as soon as you have them cut and while making the remainder of the filling.
- To make the filling, put the two remaining apples, dates, cinnamon and the shredded coconut into a food processor and pulse until finely chopped.
- After everything was mixed well, fold in the apple pieces and layer it on top of the crust.
- You can use some of the coconut as decoration. Place everything into the freezer for about 1 hour and it will be ready to serve. Keep any leftovers in the freezer too.
Notes
Because the base is very sweet (because of all the dates), It is good to offset the sweetness with some acidity and tartness. For this reason I selected the granny smith apple and added some more lemon juice.
Besides the apple pieces, you can also fold in some raisons.
