anana Ice Cream.

My favorite sweet treat, Banana Ice Cream.
One of the most satisfying desserts (or anytime sweet treats) I make is also one of the simplest. Freezing fresh fruit and then processing it in a blender until smooth and creamy makes delicious ice “cream.” Let your imagination (and the season) dictate which fruit or combination of fruits you prepare.

Ingredients
 
 

Banana Ice Cream

  • 3 bananas Frozen
  • 0.5 cup almond milk
  • 1 tsp ground cinnamon
  • 0.5 tsp vanilla extract

Chocolate Drizzle

  • 1 tbsp maple syrup
  • 1 tsp cacao powder TerrAmazone Organic Cacao Powder
  • 1 tsp water

Instructions
 

Banana Ice Cream

  • Peel the bananas and break into smaller chunks. Place the bananas in the freezer until completely frozen, at least 2 to 3 hours (or overnight - is better!).
  • To prepare the ice “cream,” place the frozen bananas in a blender and pulse until blended into a creamy paste. Add the almond milk to keep the fruit moving, and if the blades are not catching the fruit, let it stand at room temperature for a few minutes to soften it slightly.
  • Add the cinnamon and vanilla extract (this can be changed based on flavor preference).
  • Transfer the pureed bananas into a chilled container.
  • Work quickly so the ice “cream” does not melt into a liquid.

Chocolate Drizzle

  • To make the drizzle: stir the ingredients together until smooth.
  • It will take a second for the cacao to combine with the liquid. Drizzle on your ice cream and enjoy!
  • Add whatever else you like: berries, almond butter, cinnamon, cacao nibs, chia seeds, hemp seeds, coconut...

Notes

Besides banana you could use any other fruit that you have or is in season. Just make sure that it is frozen before you use it.
The Nutritional Facts label includes the chocolate drizzle but I make it without the drizzle most of the times.
