This is a great Southwestern-style dip or dressing made with non-dairy milk and chia seeds as a thickener. You can change the chia-seeds/non-dairy milk ratio to make it thicker if you like. Use this spicy chipotle dressing as a dressing or as a dip with things like fresh vegetables.

Ingredients
 
 

  • 1 cup almond milk or any other non-dairy milk
  • 1 tbsp chia seeds use more if you want a thicker dressing
  • 3 sun dried tomatoes
  • 1 dates pitted
  • 1 clove garlic
  • 1 tsp miso
  • 2 tbsp lemon fresh squeezed lemon juice
  • 1 tbsp apple cider vinegar
  • ½ tsp chipotle powder
  • ¼ tsp ground cumin

Instructions
 

  • Add all the ingredients into a high speed blender and mix until smooth.

  • To get the right thickness you can do a few things. Adding more chia seeds will make the dressing thicker and you could make it into a dip. You can let all the ingredients sit in the blender for 15 minutes to allow the sun-dried tomatoes and chia seeds to rehydrate and soften. Alternatively, all ingredients can be blended until smooth and then left to sit for 15 minutes to thicken.
  • This dressing will benefit from being refrigerated for a few hours before using it. This way it has time to thicken.

Notes

With most recipes, feel free to play around with the different amounts of ingredients the next time you make this. For instance, for more of a tomato flavor, add more sun-dried tomatoes. For more spice, add more chipotle powder.
