ijon Vinaigrette.

Start by making your apricot paste as a base for this dressing. Like the date paste, apricot paste is something you can make in advance and store in your freezer. It will freeze solid so make sure to store it in smaller containers. Try this vinaigrette on steamed veggies (e.g. asparagus) or it can be used to add flavor to ingredients such as tofu, tempeh and mushrooms.

Instructions
  1. First prepare your fruit paste
    Fruit Paste
  2. In a bowl, whisk all ingredients together
  3. To thin the vinaigrette, you can use a splash or orange juice or just water
  4. Add the mixture into a jar or bottle, close the lid and shake well
  5. Before each use make sure to shake the dressing
Recipe Notes

Use as a delicious dressing or pour over cooked asparagus, potatoes with fresh capers and herbs. This dressing can be made in advance. I actually like to make it in advance so the flavors can meld together. This dressing (or marinade) will stay good for a few weeks in your fridge (if it will last that long!)
