This Thanksgiving Roast is a dish I created by putting together several other dishes that I make throughout the year. I just wrapped it in some phyllo dough and it came out as something very special. It doesn't only look good, it tastes great too.
This Apple Curry Walnut Salad is a nice sweet, savory and crunchy mixture that makes for a delicious bite. This salad is great on bread or a tortilla but this salad is so good that I could eat it all by itself as a meal. Make sure to slice the apples, red bell pepper and celery thin for a more elegant salad.
This Olive & Sun-Dried Tomato Tapenade is the perfect spread for a tomato bruschetta, crackers and/or a homemade lemon-garlic crostini.
This hearty vegan veggie loaf or "meatloaf" is made from a base of lentils and rice, baked up to perfection and topped with a flavorful BBQ glaze. Serve with sides such as mashed potatoes, carrots, greens or eat it just by itself. It is not quite a classic meatloaf. I think it is even better :-)
