2green chiles2 or 3 depending on how spicy you like your chutney. To reduce the heat, you can remove the seeds.
½cupmint leavesfresh (doesn't have to exact, if you like the mint flavor feel free to add more)
1bunchcilantro
1/2cupcurry leavesfresh (optional)
2tspginger2 tsp minced or 2 slices of ginger
½mangounripe mango but if ripe, you could reduce the amount of sugar (jaggery)
1tspamchur powderamchur = dried mango
2lemonjuiced
½cupcashews
½cuppeanuts
1tbspjaggeryor to taste
1pinchsea salt
Instructions
Add all ingredients into a high speed blender and blend until you reach a smooth consistency.
Notes
This will stay good and vibrant green for several days in the fridge when stored in a airtight container. It also freezes well, so feel free to make a BIG batch.
