1cupsweet onionfinely chopped
2clovesgarlicminced
1jalapeño pepperfinely chopped
1cupdillfresh and finely chopped
0.5cupgreen onions(scallions) finely chopped
1cupcelery
1cupcherry tomatoescut in half
2tspsmoked paprika
3tbspbalsamic vinegar
1pinchsea saltto taste
Instructions
Dry sauté the onions* use some water or vegetable broth to avoid the onions to stick or burn to the skillet or wok. Add the jalapeño pepper and minced garlic and cook for an additional 30 seconds.* Note: To dry sauté (or sautéing without oil!) use high heat and frequent movement to caramelize the food. An important thing to keep in mind is that foods will not brown, color or caramelize if you use liquid or have too much moisture. Once you achieve the desired coloration then add your liquid.
Add the mixed green peas into the a wok (don't cook, just make sure they are tender and warm).
Add dill, cut cherry tomatoes, celery and green onions + the smoked paprika, salt and pepper to taste.
Add the balsamic vinegar. Mix with the warm green pea salad and serve - enjoy.
