Soak the dried fruit in water for 1 or 2 hours (or overnight).
Drain the soaked fruit (don't throw away the soaking water - this can be used to get the blending going!).
Add the soaked dates to a high speed blender and add enough soaking water to create a smooth paste.
Transfer paste into a glass jar and place in the fridge where it will keep for about 3 weeks. Alternatively, it can be frozen for several months.
Notes
For different flavor profile you can add spices like cinnamon, vanilla, a pinch of sea salt or some fresh lemon juice. You can make the date paste in advance because it will store in the freezer and not freeze solid so you can easily take a scoop and use it in any of your dressings or dishes. This will work for date paste because of the high fiber in dates.
