  • 5 eggs lightly beaten
  • 1 cup spinach you can create a mix of kale, spinach and asparagus
  • 0.5 onion finely chopped (red or sweet onion)
  • 1 tomato finely chopped and seeded
  • 0.5 cup mushrooms finely chopped
  • 0.5 tbsp coconut oil

Instructions
  1. Collect and chop all the ingredients
  2. In a large skillet, saute the asparagus (or kale, spinach - whichever you like or combination you like), onion and mushrooms in coconut oil until asparagus are crisp-tender.
  3. In a large bowl, beat eggs until foamy and combine with the spinach/kale/asparagus mixture. After all ingredients are fully mixed, pour into a "muffin pan". Make sure the muffin pan has been coated with some oil (coconut oil).

  4. Bake at 350°F for 30 - 40 minutes or until a knife inserted near the center comes out clean.
  5. Lets cool off for 10 minutes before serving.
Recipe Notes

Add some salt and pepper to taste!

Use your imagination for this dish. All the below ingredients are optional but can be added to taste:

  • 1/4 cup minced fresh parsley
  • drop of hot-sauce
  • 1/4 tsp garlic powder
  • 1/4 tsp dried or fresh basil, oregano, rubbed sage, or thyme.

You could also sprinkle some goat/sheep feta cheese on top or through the mixture for extra flavor.
