This dish is good cold, warm - a great way to finish your leftover sweet potatoes!

Ingredients
 
 

  • 1 sweet potato peeled and cut into smaller pieces
  • 1 cup rolled oats
  • 0.5 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1 cup almond milk
  • 1 tsp orange zested
  • 0.25 tsp ground allspice
  • 1 dash sea salt

Instructions
 

  • Collect all ingredients
    Sweet Potato Bisque Ingredients
  • Steam or boil the sweet potato until tender, about 15 minutes. I normally boil a batch of them and use them in different dishes (e.g. Sweet Potato Bisque).
  • Mash the sweet potato and add the oats, almond milk and spices. Add some salt to taste.
  • Cook the oats over a media heat until the oats are tender or the way you like them. About 10 minutes.

Notes

You could add some sweetness but for most the sweet potatoes and the spices are already sweet enough.
