This salad is filled with nutritional benefits. The bitter greens are high in vitamins A and C, the avocado and nuts/seeds will supply your body with healthy fats and the cucumber will rehydrate your body. A great way to replenish your body with daily vitamins.

Ingredients
 
 

  • 1 cup arugula Baby Arugula
  • ½ cucumber
  • 1 avocado
  • ½ cup cilantro finely chopped
  • ½ cup parsley finely chopped
  • ½ cup walnuts
  • ½ cup sunflower seeds

Instructions
 

  • Add all the greens into a bowl.
  • Chop the avocado, cucumber, parsley and cilantro and sprinkle over the greens.
  • Add the walnuts and sunflower seeds and sprinkle the dressing on top of the salad.

Notes

Besides the walnuts and sunflower seeds that are optional, you could also add some seaweed flakes (Dulse) for some extra flavor and nutrients.
