Guacamole is something that I make often. Great as a dip with some chips or veggies but for halloween I just dress it up a little. Check my guacamole recipe for some additional information.

Ingredients
 
 

  • 3 avocado
  • ¼ cup red onion finely minced
  • jalapeño pepper finely diced
  • 1 clove garlic finely minced
  • ¼ cup cilantro fresh and chopped
  • 2 lime juiced
  • ¼ tsp ground cumin
  • 1 pinch sea salt

Instructions
 

  • Prepare all you ingredients by finely dicing the jalapeño pepper. I always remove the seeds to avoid making it too hot.
  • Finely mince the red onion and garlic.
  • Finely chop the fresh cilantro.
  • Cut the avocados in half and remove the pits. Take a spoon and scoops out the flesh and place into a medium size bowl.
  • Mash the avocados with a fork and add all the ingredients you just prepared.
  • Squeeze the limes and add the juice of one lime plus some salt and the ground cumin to the mixture.
  • Mix well and add more lime juice and salt if needed.
  • Now it's time to carve your pumpkin and have fun with it.

Notes

For this Halloween dish, I do recommend to add some seeded diced tomatoes to the guacamole just before serving. If you do not have enough avocados, you could add some mashed green peas into the mixture. This will brighten up your guacamole and an easy way to extend your dish.
The estimated time doesn't include carving the pumpkin. Have fun doing this part and include the entire family.
