Simple and raw, this versatile nut milk is loaded with nutrients, without the fillers included in some store-bought versions. Also store-bought nut milks are pasteurized, which reduces their nutritional value. Almond milk can be used whenever nut milk is called for in a recipe, and of course its ideal on cereal.

Keeps in the refrigerator for up to 5 days.

Instructions
  1. Soak the almonds in a bowl (or bottle) with water for 8 to 10 hours. The longer the soak, the creamier the almond milk, up to about 12 hours. Drain and rinse the almonds.
  2. In a blender, combine the soaked almonds with the 3 cups (500 ml) of water and the dates (if using, they are optional). Blend for one or two minutes or until smooth and milky.
  3. Strain the almond mixture through a cheesecloth, extracting as much liquid as possible. Discard the solids (or use for something else).
  4. Increase the sweetness if desired by adding another date. Add some salt to taste.
Recipe Notes

A high speed blender and a cheesecloth are needed tools to make the almond milk.

To make chocolate milk, add 2 tsp cacao powder. You can use any other raw nuts or seeds, or a combination of several (such as hemp, sunflower, cashew, walnut). Cashews will give you the creamiest milk.
