Ingredients
 
 

Making of the Mango Paste

  • 1.5 cups dried mango
  • water

Assembling the Parfaits

  • 1.5 cups mango fresh or frozen, diced
  • 1.5 cups raspberry fresh
  • 2 cups cashew vanilla cream home made
  • 0.25 cup almonds slivered
  • 2 tsp lemon zest

Instructions
 

Making of the Mango Paste

  • Place the dried mangos into a bowl and fully cover with water.
  • Let soak until they have completely softened.
  • Add the soaked mangoes into a high speed blender and blend until smooth. Only add as much water to make this into a smooth paste.

Assembling the Parfaits

  • To assemble the parfaits, layer with mango paste, raspberries, fresh mangos, vanilla cashew cream. Repeat if necessary. Garnish each parfait with toasted almonds a hint of lemon zest and some fresh mint.
